Watermelon Salad


On the fruit hierarchy chart, watermelon is near the top. Not the tip top, that is saved for the President of Fruits, the Peach. Directly under the Peach is the pineapple (consider it the Secretary of Defense), then the watermelon (Secretary of the Interior maybe?). Anyway, there is very little that beats a slice of cold watermelon on a hot day. However, it lacks a certain sophistication. Enter watermelon salad.

Watermelon Salad with Cracked Pepper Vinaigrette

4 cups watermelon - cubed
4 ribs celery - diced
1/2 cup red onions - diced (I used a full cup)
1/2 cup feta cheese (not the block)
1/2 cup Cracked Pepper Vinaigrette (I Used Cookwell & Co.)
Pinch Fresh cracked black pepper (to taste)
Pinch Grey salt (Flake Sea salt can be substituted)

Add together, chill, then serve.

This sounds really interesting.

Cheese with watermelon..I never would have thought of that.

Perfect summer food.

I was skeptical at first, but everyone who has tried it reported they really liked it. I saw an alternate recipe that used mint instead of onion, as some folks don't like onions.
